Whether you are a member or a guest or just intrigued with who we are, the following pages will give you an insight into an organization that traces its heritage back almost 800 years to 1248 when French King Louis 9th created a Guild for those chefs who cooked the Goose over an open fire. Their clientele was mainly Royalty and wealthy merchants. By 1509, the Guild represented all those chefs who prepared any form of meat over the open fire. French in its origins, history, and custom, Chaine now has over 25,000 members globally in more than 100 countries and over 1,000 clubs or Bailliages, where members can attend dinners and build a network of friends. A third of the global members are professionals鈥攃hefs, sommeliers, wine merchants, as well as hotel and restaurant owners and management.
