How to become a Member

Membership is open to anyone, Professional or non-Professional. However we try to maintain a ratio of 1:1 of professional to Non-Professional members. The Professionals are Chefs, Sommeliers, Maitres d’Hôtel, Restaurateurs, and Hôteliers. We aim to have around 40 members in Le Bailliage Régional de Phuket en Thaïlande. The limit is not strict, but we have a number of host establishments that wish to restrict our attendance at a meal to 24 diners, and while not every member will attend every event we do not wish to have too many members disappointed. Membership runs from April to March each year, but you may join at any time. There is an advantage to joining in September of any year as the initial membership fee then covers eighteen months instead of twelve.

Are you a culinary or hospitality industry professional? Are you amateur gastronome? For professionals, membership provides opportunities to demonstrate exceptional skills and creativity to a discerning, appreciative audience. For amateurs, membership provides significant learning opportunities. For all interested men and women, Chaine membership offers opportunities to meet people who share a common interest in fine dining and good fellowship.

Benefits of Membership

All chapters (bailliages) offer fine dining events, often black tie, in the best local restaurants and hotels. The menus and dishes are created exclusively for these dinners by the chefs, many of whom are also members of the confrérie. This interaction between our professional and amateur members distinguishes La Chaîne from other organizations.

Each bailliage holds one grand gala event each year to celebrate the induction of new members, who are presented with ribbons signifying their rank. The activities of La Chaîne are not limited to grand dining, however. Diners amical—less formal meals, picnics and barbecues—also play an important role in each chapter's schedule.

The Society also offers a growing number of regional and national events that are open to all members. Members may also wish to inquire about attending annual events, also called Grand Chapitres, scheduled by other bailliages around the world. Many of our bailliages hold events to support local culinary schools, and the national Chaîne des Rôtisseurs Foundation holds auctions and other fund-raising events to provide scholarships at schools such as the Culinary Institute of America, Johnson & Wales University, and the University of California at Davis. The society also organizes two competitions annually, a Young Chef Rotisseur Competition and a Young Sommelier Competition. Both begin at the regional level. In the case of the Young Chef Rotisseur Competition, the winner goes on to compete in the international finals.

Membership includes a subscription to the U.S. Chaîne des Rôtisseurs Gastronome, a full-color high-quality magazine that reports on Society events around the country.

Societe Mondiale du Vin—Our Wine Society

The Chaîne des Rôtisseurs has a society within the society, Societe Mondiale du Vin, for those who have a special knowledge of or interest in wine and spirits. Members of this group organize special wine related events, including trips to wine-producing regions around the world.

Brillat-Savarin—Our Society Focusing on Cuisines

L'Academie de Gastronomie Brillat-Savarin is a Society within the Chaine that has two focuses. As the preeminent honor society for students in the culinary arts, it presents awards to the finest young graduates of USA culinary programs. It also upholds and popularizes regional cuisines with its own travel program.

Chaine membership is by invitation only. While most chapters welcome new members, some have waiting lists. Contact information for a particular bailliage may be found by visiting the Global section of this Website. Further information about membership may be obtained from our Phuket Office.

To become a member of the Chaîne des Rôtisseurs - International Association of Gastronomy - a prospective member is subject to being sponsored, to the acceptance of the By-law and the Règlement Intérieur, and full payment of ADMISSION FEES and ANNUAL DUES for renewal.
