Whether you are a member, a guest, or just intrigued with who we are, the following pages will give you an insight into an organization that traces its heritage back almost 800 years to 1248, when French King Louis IX created a Guild for those chefs who cooked the Goose over an open fire. Their clientele was mainly Royalty and wealthy merchants. By 1509, the Guild represented all those chefs who prepared any form of meat over the open fire. French in its origins, history, and custom, La Chaîne now has over 25,000 members globally in more than 100 countries and over 1,000 clubs or Bailliages, where members can attend dinners and build a network of friends. A third of the global members are professionals — chefs, sommeliers, wine merchants, as well as hotel and restaurant owners and management.
